Despite a very slow start to my week, I’m quite enthusiastic that Friday is finally here. I’m heading to Fish Creek for the weekend to do some photos for a cute little olive oil and vinegar shop. Keep and eye on Facebook because I’ll be sure to give you a sneak peak! Obviously this would be a bit more enjoyable if the weather was nicer but I’m just eager to get away for the weekend to somewhere quiet. Many know that the Door County area practically shuts down in the winter but it makes for the perfect getaway spot if you need a little quiet.
I started a new diet/fitness program this week through my small gym called New Year, New You. It’s really a team competition focused around boot camp classes and carb-cycling diet program. This is new to me but basically you get carbs one day and the next you don’t. The first day of not having carbs seemed a little strange. You find yourself being creative with things to make them taste better without carbs. I like the fact that I have an entire meal plan laid out for me. It really takes the guesswork out of figuring out what to eat. This is a 6-week program so I’ll be updating you weekly on how it is going.
These breakfast muffins are part of the program, obviously on days that I can have carbs. I like to add a little bit of vanilla and cinnamon to the batter to enhance the flavor but they are a great filler for breakfast. You can also ad a scoop of chia seeds to add protein and nutrients. There are only 152 calories in 2 muffins, which is pretty awesome! I have been enjoying these with a side of fresh fruit and a protein shake to start my day.

- 1 Cup Oatmeal
- Â½ Cup Egg Beaters
- 1 Cup Unsweetened applesauce
- 1 Tsp. Baking Soda
- Mix all ingredients together and pour into six muffin cups.
- Bake at 350 for 20 minutes.
- Cool completely before removing from the muffin cups.
